- Firstly..Wash basmati rice properly and soak in water for 30 min....
- Heat a huge vessel...Add three cups of water and boil it..Once boiled add soaked rice with salt,pinch of turmeric, 4 cardamon, one piece cinnamon, 1 Tej patta,1 javitri, 3 cloves....
- Cook it on high flame stirring inbetween till 3/4 the cooked...
- Strain in colander and keep aside.....
- Now we will make gravy of biryani...Heat a pan..Add ghee...Add shah jeera,cardamon,Tej patta, cinnamon,cloves,mace and cook till they crackle....
- Now add finely chopped onion...And saute till they become translucent....
- Now add green chilli paste,ginger garlic paste and saute till raw aroma goes away...Now add chopped vegetables and cook till tender....
- Now add kaju puree,tomato puree,turmeric and cook till all water disappears....
- Finally add chopped coriander,mint leaves and whisked curd and off the gas.
- Heat a huge pan...Spread the base with ghee..Now add one layer of half cooked rice....
- Add the vegetable gravy mixture as the second layer.
- Now transfer the rest of rice as the third layer...Sprinkle Kesar milk and fried onions on top....
- Close the lid and allow it to cook on slow flame for half HR..Finally give smoky effect by placing hot coal in a bowl topped with ghee in the biryani vessel and close the lid for five min....
- Ready to serve with Mirchi ka salan.
