Malabar Veg Biryani step by step

  1. Soak rice for 1 hour.
  2. Clean and drain excess water. keep it aside.

  5. In a separate pan, melt 1 tsp ghee, add bay leaf, cloves, cardamom and cinnamon.

  8. Fluff rice with fork on a plate and keep it aside.
  9. In cooker, melt ghee, add bay leaf, star anise, ginger garlic paste, chillies and saute for 3 min.
  10. Add onions and saute until translucent.
  11. Add tomatoes and saute until soft.
  12. Add biryani masala and pepper. mix well.
  13. Add curd, salt, veggies and water. mix well.
  14. Pressure cook on high heat for 1 whistle or until parboiled.
  15. Grease a handi. Layer with 1/3 rice.sprinkle little lime juice.
  16. Add half of chopped coriander and mint leaves.
  17. Add veg masala on top.
  18. Repeat the layers, the last layer being rice.
  19. Garnish with fried onions and cashews.
  20. Cover with foil and lid.
  21. Heat tawa, place pan containing very hot water with lid.
  22. Place biryani handi on top. cook on low heat for 15 minutes.
