- Blanch the tomatoes either in a pot or cooker for abt 3 whistles in the cooker.once you remove it from the cooker put them in cold water later peel them,cut into 4 pc and blend them into paste and keep it aside for later use..
- In a deep pan, pour the ghee,splutter the mustard,cumin seeds, add the curry leaves and the smashed garlic and fry for few seconds, then add the turmeric,chilly & pepper powder and fry..
- Once slightly fried add the tomato puree along with water as per the thickness required,normally this consistency is watery so that you can drink it and have it with rice as well..
- Add jaggery depending on the sweetness and tanginess required, tamrind water is added only if you are using apple tomatoes,if your using the organic sour tomatoes you don't need tamrind water but jaggery is a must to give you the tanginess.finally garnish it with coriander..
