Chicken Biryani step by step
- Cooking the Chicken Masala: Clean with pinch of turmeric and cut the chicken into medium-sized pieces and drain the water well. Grind ginger, garlic, green chillies into a thick paste and set it aside. Marinate the chicken with all above-mentioned ingredients “For Marinating Chicken” for 1 hrs and shallow fry it. Heat oil/ghee in a pan, add thinly sliced onion saute, add the ginger, garlic, green chilli paste,saute until brown colour..
- Add chopped tomatoes and saute for few seconds. Add the biryani masala,turmeric powder,red chilli powder,coriander powder,combine well and saute untill the raw smell goes. Add the chopped coriander & mint leaves and mix well. Then add the shallowed fried chicken and cover & cook on medium flame for about 10 mins add water if needed and adjust salt..
- Cooking the Rice: Soak the rice for 30 mins and drain the water completely. Boil the required water,with half of the whole masala (cardamom, cloves & cinnamon) and add little oil and salt. Heat ghee in a pan & add whole masala. Add the cleaned & drained rice, when the rice starts cracking add it to boiled water and cook uncovered the rice for 8-10 mins. - Layering the Biryani: Preheat the oven to 180 degree 10 minutes before baking the biryani. Apply some ghee to a baking dish. Put one layer of rice in the dish. Sprinkle some chopped coriander & mint leaves, fried onion, cashew and raisins (if using) and drizzle some ghee. On top of that spread some chicken masala.
