Ingredients of Chicken dum biryani

  1. You need 250 gms of basmati rice (measure it in a cup).
  2. You need 500 gms of chicken.
  3. Prepare 5 of cardamom.
  4. You need 1 stick of cinnamon.
  5. You need 2 of Bay leaves.
  6. You need 2 tbsp of ginger garlic paste.
  7. You need 4 of onions.
  8. It's 2 tsp of cumin seeds.
  9. You need 2 tbsp of biryani masala (used Eastern biriyani masala).
  10. It's 1/2 cup of curd.
  11. Prepare 2 tbsp of chopped mint leaves.
  12. It's 2 sprigs of curry leaves.
  13. You need 2 tbsp of chopped coriander leaves.
  14. It's to taste of Salt.
  15. It's 4 -1/2 tbsp of ghee.
  16. Prepare 150 gms of wheat.

Chicken dum biryani instructions

  1. To the chicken add curd, 2 chopped onions, ginger garlic paste, salt(which would be enough for just the chicken), biriyani masala, curry leaves, mint leaves and coriander leaves. Mix it well and let it soak for a couple of hours..
  2. Meanwhile, heat 2 tbsp of ghee in a pot, add the cumin seeds, cardamom, bay leaves, cinnamon to it. Once it releases it's flavor, add the rice, stir for few minutes.(I used Dawat biriyani rice and I didn't wash it). Add water double the amount of rice by using the same cup which you used to measure the rice..
  3. Add salt to rice which would be enough for just the rice. Cook the rice until it's half done. Need not strain it..
  4. Make a dough with the flour. In a thick bottomed pan, heat 2tbsp ghee and add the chicken. Let it simmer, when the rice is half done, pour it over the chicken and spread it evenly. Cover the lid. Along the edge of the lid, use the the dough to seal it. Over low flame let it sit for half an hour..
  5. Chop the remaining 2 onions. In a pan heat 1/2 tbsp ghee and brown the onions with a pinch of salt and a pinch of sugar..
  6. Lastly, when you uncover the biriyani, sprinkle the browned onions over it and serve it with curd or raita..
