Ingredients of Thalasserry Chicken Biriyani
- You need 1 of chicken (cut into 14 pieces).
- You need 1 kg of Biriyani rice (kaima rice).
- Prepare 6 of Onion medium thinely sliced.
- It's 3 of Tomato big chopped.
- Prepare 8 of Green chilli.
- You need of Ginger a big piece.
- It's 1 of Garlic whole.
- Prepare 1 tsp of Turmeric powder.
- You need 1 tbsp of Chilly powder.
- Prepare 1 tsp of masala Garam.
- Prepare to taste of salt.
- You need 1 of lemon.
- You need 2 sprigs of curry leaves.
- It's 3 sprigs of cilantro.
- You need 6 of Raisins.
- Prepare 5 of Cashews.
- It's 250 ml of Sunflower oil.
- It's 100 gm of Ghee.
- You need 7 cups of water (boiled).
- It's of 1/4 pinch of saffron milk soaked in cup warm.
Thalasserry Chicken Biriyani step by step
- Making the chicken masala: Marinate the chicken with turmeric powder chilly powder and salt.keep it for 15 minutes..
- Saute it in a frying by pouring oil for 10 to 15 minutes (not for fry).
- Heat a vessel and pour oil |(you can use balance oil that is used for frying the chicken)and put thinely sliced onion by adding salt and saute until it turns brown colour.
- Add tomatoes into it and saute well.then add green chilly,garlic and ginger paste into and saute it tooo.
- Add fried chicken pieces into the masala,mix well and close it with alid and make the fire in simmer mode.let it cook for some times..
- Open the lid after a few minutes and turn over the masala with a stirrer.add cilantro lemon juice and gharam masala mix it.Now our masala is ready..
- Making the biriyani rice:Heat another vessel and pour ghee with 3 tbsp of oil.
- Put 1 cup thinly sliced onion into the boiling oil fry until golden brown color put the cashews and raisins into it fry them too.
- Remove the fried onion raisins and cashews from the oil and keep it aside..
- Add 1 piece of cinnamon stick,2 cardomon and 3 cloves.add cleaned drained biriyani rice into it and saute in medium flame for 5 minutes.pour boiled water and salt to taste into it..
- Close the vessel with the lid and let it cook.turn out the sides using a stirrer at a regular intervals.make sure the rice should not stick at the bottom of the vessel.make the fire in simmer mode and check whether rice is cooked or not.if not cook it for few more minutes.switch off the fire..
- Take the biriyani rice in a quarter plate or a stirrer and place it over the chicken masala and make a layer |(1/3 of the rice should be place over the masala).make the fire in simmer mode.this is known as DUM).
- Put the fried onion,cashwes and raisins over it along with 1/4 tsp gharam masala and cilantros.
- Make another layer with the rice and put the above things.again continue the layering and press the rice with stirrer.sprinkle the saffron mix on the top..
- Close the vessel tightly with a lid (you can place a weight over the lid so that it will be close tightly.then only the spicy taste of the masala joins with the rice..
- Let it cook for few minutes.open the lid after 5 minutes and again retake the biriyani rice into the biriyani vessel using stirrer until the masala portion reaches..
- Now our delicious THALASSERRY CHICKEN BIRIYANI is ready.
- There will be some yellowish rice over the masala mix it along with the rice in the vessel.serve it separately in two plates or you can place the rice over the masala and serve it.......
