Ingredients of Chicken Biryani

  1. Prepare 400 gm of chicken.
  2. You need 350 gm of Basmati rice.
  3. You need 3 of medium sized onion.
  4. You need 3 of medium sized potato.
  5. It's 1 of tomato.
  6. You need 6 cloves of garlic.
  7. You need 1.5 inch of Ginger.
  8. You need 1 tablespoon of Biryani masala.
  9. It's 6 of bay leaves.
  10. It's 2 pieces of Cinnamon.
  11. You need 2 pieces of Cardomom big.
  12. Prepare 6 pieces of Cardomom small.
  13. Prepare 1 teaspoon of Garam masala.
  14. It's 1 teaspoon of chilli powder.
  15. You need 1 teaspoon of Jeera powder.
  16. You need 1 tablespoon of vinegar.
  17. You need 100 g of curd.
  18. You need of Few drops of Rose water,sweet essence and saffron.
  19. You need To taste of Sugar.
  20. Prepare As needed of oil/ghee.

Chicken Biryani step by step

  1. Wash and marinate the chicken for 2 hours with curd, vinegar,jeera powder,chilli powder, mustard oil. Cover the vessel and keep it in fridge for 2 hours..
  2. Take water 4 times more than rice in a cooking vessel. Put the cardamom, Cinnamon, bay leaves and salt and bring to boil. Keep this aside and covered.
  3. Cut the onions into thin slices. Fry 1 onion till deep brown and keep aside. Fry the potatoes half cut and keep aside.
  4. Add some oil and ghee into the pan. Add Jeera and Garam masala into it. Add the remaining onion and garlic and saute it.
  5. Add Ginger and garlic paste, tomato pieces and fry it for a while.
  6. Once the masala is well cooked, add the marinated chicken into it and mix well. Let it cook covered in low heat.
  7. Keep mixing the chicken in between and cook it till the chicken is well cooked. This will take around 45-60 min.
  8. Once chicken is soft add the Biryani masala,garam masala and 1/2 teaspoon sugar and mix well and remove.
  9. Add the soaked rice into the water prepared in step 2 and let it cook. Once rice is done, keep it aside to cool.
  10. Take a separate vessel and put one layer of rice into it. Add 2-3 drops of rose water, some saffron, ghee and meetha atar(essence).Add a layer of chicken and some potatoes on it.
  11. Repeat the same for one more layer and cover it. Put the fried onions on top.
  12. Serve from a side to get appropriately mixed rice and chicken.
