Ingredients of Rajma
- Prepare 1 cup of Rajma(kidney beans).
- Prepare 4 of garlic cloves.
- Prepare 3 of Elaichi (cardamom) pods.
- Prepare of For the masala.
- It's 2 of Tomato.
- Prepare 2 of Onion finely chopped.
- It's 3 tsp of Ginger garlic and greenchilli paste.
- It's 3/4 tsp of Garam masala powder.
- You need 1 tsp of Red chilli powder.
- It's 1/2 tsp of Turmeric powder.
- You need To taste of Salt.
- It's 2 tbsp of Coriander powder.
- You need 1 of Bay leaf.
- It's 2 inch of Cinnamon stick.
- Prepare 1 tsp of Coriander leaves.
- It's 1 tsp of Lemon juice.
- Prepare 2 tsp of Oil.
- It's 1 tsp of Ghee.
I used all of the ingredients but I had to make a few changes in the preparation method because I don't. Rajma Masala is a very popular dish in the Northern states of India. Rajma step by step
- Soak rajma for 12 hours.wash and drain and pressure cook adding water+elaichi+garlic cloves for 6 whistles (depends on the quality of the rajma).
- Take the tomatoes and blend them in a mixie.
- Heat a pan add Bay leaf+ cinnamon when aromat add onions and fry till pinkish colour later add blended tomato paste and cook till it the gravy thickens and reduces a bit add all the dry masala and saute nicely till it changes it's colour to darker shade and it's dry..it's should not get burnt....
- Now add dis masala to the cooked rajma and mix,add salt add some coriander leaves.mash some of the rajma using a ladle and put the lid of the pressure cooker and pressure cook for 2 more whistles.
- When pressure releases add 1tbsp lemon juice and mix finally pour a tsp of ghee.... Garnish with coriander leaves.
- Best served with rice and curd.
