Dhokla/Idada. Did I say that my son Aakash takes many Indian food in his lunchbox like Handvo, Dhokla, Khaman, Kapuriya, Khandvi, Idada, Khichu Papadi Lot, Pudlas, and more. One week, I would prepare Handvo, and he would take three days, Monday, Wednesday and Friday happily. The other week, I would prepare Dhokla, Idra and again he would take three alternate.

Sandwich dhokla is similar to white dhokla or Idra dhokla as the batter used in both dishes are exactly same. You can have Dhokla/Idada using 8 ingredients and 11 steps. Here is how you achieve it.

Ingredients of Dhokla/Idada

  1. Prepare 2 cups of Rice.
  2. It's 0.5 cup of urad dal.
  3. Prepare 0.5 cup of Chana dal (add only for Dhokla).
  4. It's 2 tbsp of curd.
  5. It's 1 sachet of eno.
  6. You need as per taste of salt.
  7. It's 1/2 tsp of mustard seeds.
  8. It's as required of oil.

Idada - a non-fermented Dhokla perfect for toddlers and also for people with acidity. These dhoklas are generally thinner, don't rise as much as regular khaman or yellow dhokla but these are also easier on digestion, so can be had for breakfast or as snack with green chutney or ketchup for kids. Idada Idada is a non-fermented version of dhokla. We can eat Idada as breakfast or as a snack along with green chutney or with raw oil.

Dhokla/Idada step by step

  1. (On first day morning) Mix rice, dal and keep it under water for 1 day.
  2. Make pieces of flat cake.
  3. (On first day night) Then make paste in mixer while adding water.
  4. Add salt, haldi, curd 2 big spoons, eno 1 teaspoon then mix it.
  5. (On next day morning) add 1 teaspoon eno and mix it properly.
  6. Take oil in dhokla making pan and pour mix into it..
  7. Simultaneously add water to shell and add lime to it..
  8. Now put pans in to shell and cook for 15 minutes.
  9. Make pieces of flat cake.
  10. Take oil and rai in one utensil and do vaghar of pieces of dhokla.
  11. Dhokla is ready!!!!.

Surati Locho Locho is steamed Gujarati snack. It is made from Gram Flour. It is often seasoned with oil, butter, Sev, spices, coriander, onion. Khatta Dhokla is a traditional Gujarati snack. The 'khatta' in the khatta dhokla or white dhokla is the dominant flavour of this traditional khatta dhokla and this sourness is brought about by adding a little sour curds.
